The Indian dish masala can refer to a spicy and tangy blend of masalas, or spice pastes. Masala is usually used as a dry marinade for meat, fish or vegetables. The spices in this paste give the dish a distinctive flavor. It typically contains coriander seeds, cumin seeds, cardamom pods, peppercorns, cloves and cinnamon sticks. It also has dried ginger, garlic and chili peppers. To make the paste hotter, some recipes call for adding cayenne pepper or chopped fresh green chilies. The ingredients are ground together in a mortar and pestle until they form a fine paste with a slightly gritty texture. This is how we make our masala steak sauce which we serve with grilled chicken masala too.
Our masala for steak is a family recipe that's been perfected over generations. There are only four simple ingredients: coriander, cumin, turmeric, and chili powder. No artificial flavors or colors. Just an all-natural blend of spices with the familiar taste of Indian cooking. We've used this masala on everything from steak to fried chicken. It also works well as a marinade for chops or shrimp.
