Ingredients:
500 grams lamb, cut into cubes
2 tablespoons vegetable oil
2 onions, finely chopped
4 cloves garlic, minced
1-inch piece of ginger, grated
2 teaspoons ground coriander
2 teaspoons ground cumin
1 teaspoon ground turmeric
1 teaspoon Kashmiri red chili powder (adjust according to your spice preference)
1 teaspoon ground fennel seeds
4 green cardamom pods, lightly crushed
2 bay leaves
1 cinnamon stick
1 cup plain yogurt, whisked
1 cup tomato puree
Salt to taste
Fresh coriander leaves, for garnish
Steps to prepare Kashmiri Lamb Rogan Josh
Step 1: Heat the vegetable oil in a large pan or a Dutch oven over medium heat. Add the chopped onions and sauté until they turn golden brown.
Step 2: Add the minced garlic and grated ginger to the pan and cook for another minute, stirring constantly.
Step 3: Add the lamb cubes to the pan and cook until they are browned on all sides.
Step 4: In a small bowl, combine the ground coriander, cumin, turmeric, red chili powder, and ground fennel seeds. Mix well.
Step 5: Add the spice mixture to the pan with the lamb and stir to coat the meat evenly. Cook for a couple of minutes to toast the spices and enhance their flavors.
Step 6: Reduce the heat to low and add the crushed cardamom pods, bay leaves, and cinnamon stick to the pan. Stir well to distribute the flavors.
Step 7: Pour in the whisked yogurt and tomato puree. Stir to combine all the ingredients and bring the mixture to a simmer.
Step 8: Cover the pan and let the lamb simmer on low heat for about 1.5 to 2 hours or until the meat is tender and the flavors have melded together. Stir occasionally and add a little water if needed to prevent it from drying out.
Step 9: Once the lamb is cooked and tender, season with salt according to your taste. Stir well and simmer for another 5-10 minutes.
Step 10: Remove the pan from heat and garnish with fresh coriander leaves.
