Ingredients:
2 cups whole wheat flour
2 tablespoons oil
1 teaspoon salt
Water (as needed)
Ghee or oil (for cooking)
Steps to prepare Khakhara
Step 1: In a mixing bowl, combine the whole wheat flour, oil, and salt. Mix well to distribute the oil evenly throughout the flour.
Step 2: Gradually add water to the mixture, a little at a time, and knead to form a firm and smooth dough. The dough should not be too soft or sticky. Adjust the amount of water as needed.
Step 3: Divide the dough into small lemon-sized balls and roll each ball into a thin disc using a rolling pin. Dust some flour on the rolling surface to prevent sticking.
Step 4: Heat a tawa or griddle on medium heat. Place the rolled disc on the heated tawa and cook for a few seconds until you start seeing small bubbles on the surface.
Step 5: Flip the disc and cook the other side for a few more seconds. Press gently with a clean cloth or a spatula to ensure even cooking and puffing.
Step 6: Now, apply a little ghee or oil on both sides of the khakhra and continue cooking, pressing gently, until it turns crisp and golden brown. Repeat the process for the remaining dough balls.
Step 7: Remove the cooked khakhra from the tawa and let them cool on a wire rack. Repeat the process for the remaining dough balls.
Step 8: Once the khakhra are completely cooled, store them in an airtight container. They can be kept for several weeks.
Khakhra is ready to be enjoyed as a snack or with tea. You can also experiment with different flavors by adding spices such as cumin seeds, sesame seeds, or crushed black pepper to the dough before rolling. Enjoy your homemade khakhra!
