Ingredients:
- 500 gms Potatoes, chopped into cubes
- 2 Onions, chopped
- 1 ½ Tomato, finely chopped or pureed
- 1 tsp ginger garlic paste
- ½ tsp Mustard Seeds
- 1 tsp Salt
- ½ tsp Turmeric Powder
- ½ tsp Red Chilli Powder
- 1 tsp Cumin Seeds
- 5-6 Curry Leaves
- A pinch of Asafoetida
- 1 tsp oil
- 1 tsp fresh Coriander, finely chopped for garnish
Steps to prepare Potato Bhaji:
- Heat the oil in the deep pan. Add a pinch of asafoetida and let it splutter.
- Add a teaspoon of cumin seeds, and ½ tsp of mustard seeds, and roast it until it turns dark brown.
- Next add curry leaves and let them crackle.
- Now add chopped onions and sauté until golden brown.
- Add a spoonful of ginger garlic paste and fry it until the raw smell is completely gone.
- Add chopped or pureed tomato and sauté it until they are completely cooked and all the ingredients are mixed together.
- Now add ½ tsp of turmeric, ½ tsp of red chili powder, and 1 tsp of salt or as per your taste, and sauté it well.
- Add chopped potatoes, mixed them well, and cover them with a lid. Let it cook on slow flame until it’s completely cooked.
- Sprinkle the freshly chopped coriander on it and serve it hot with puri, paratha, roti or luchi.
